So once my SEO site is well placed in googles listings, and ive tweaked my site so that it looks nice, is there anything further that i can do? besides improving backlinks and adding content, or is that really the bulk of it..

in doing this, i feel like its way too easy, and that im missing something

Well your ultimate goal is to get to #1. If you can do that, find more keywords to rank for.
The more keywords the better.

so lets take this as an example
you see, i dont know how to code, so how would i be able to rank higher in a different keyword

for example, lets say i owned wafflerecipes.com and i topped out on googles results for keyword "waffle recipes", and lets say i want to top out the keyword "pancake recipes" how can i do that? seeing as how i cant change my domain, or do i just register a new domain.

i've read that having the keyword in the domain is a huge help, so would i just register that. or is there some backend stuff i can do to register my waffle URL in pancakes results
 
Create one or more content pages on pancake recipes and link to/from the homepage as well as interlink the pancake pages if you have more than one, create a mini-web of relevance. (eg. wafflesrecipes.com/pancake-recipes/)

Then get some external links pointing to the main pancake recipe page with that keyword as anchor text and wait.

Keywords in domains do help but you can rank just as highly with subfolders if the content is relevant to the site's main topic. That's when you start building an authority site on the subject.
