What are you guys doing for quick and healthy lunches?

Kind of getting board of eating the same old stuff all the time. Any suggestions for fast healthy meals? My typical lunch is usually something like a chicken breast or turkey on a oatmeal wheat bread, with steamed asparagus. Season is changing and need some new ideas.
 


Just cook too much for dinner the night before.

And when it comes to dinner, experiment, and play around. Goto Google images, type in a protein, followed by a couple characters. You'll see a bunch of food you've never heard of before. Just browse around the images until you find something that looks tasty, and lookup a recipe for it.

Carrot and coriander (cilantro) soup. Make a big batch and eat all week with single slice of wheat bread/sandwich. To make soup boil 900g carrots with a little coriander (can add squash, onion, potato, garlic). Blend until nice thick consistency. Then garnish with coriander leaves.

Jacket potato (8 minutes in microwave) with tuna (mixed with low fat mayo, sweetcorn) or salmon (mixed with low fat mayo, squeeze of lemon and dill or spring onion).

Brown rice with leftovers from freezer/fridge.

Brown pasta with bolognese (use sirloin mince).

Chicken shredded over salad (add corn, yellow pepper etc.. so there's plenty of taste and less dressing needed)
 
I like to have homemade turkey chili on had (or at least the ingredients). I can do all sorts of healthy stuff with it. Put it on some egg whites for breakfast. Top a sweet potato. Pour some over some brown rice.

Whole grain macaroni + chili + cheddar....
 
eggs + spinach

stir frys, literally endless possibilities. chicken, shrimp, all vegetable, beef, pork ,etc.

protein shakes. just watch the sugar if you care about that.

Think of this:
identify the thing that takes you the longest to cook and make it in advance if possible. for example, chicken breast. grill a few pounds of those up and use it for meals throughout the next few days.

my BJJ instructor buys different types of bulk cooked meats and salsa from Mexican restaurants and uses that stuff in a lot of meals.
 
Sides:
Veggies: Raw carrots. Raw bell peppers. Raw cucumbers. Hearts of Palm.
Fruit: Watermelon, Papaya, Mini Bananas, Pineapple, kiwis, mangos, whatever is is season

Tasty Part: Quality cheeses, roasted chicken, meats and cold cuts (prosciutto, capicola, salamies, etc)
Base to put tasty part on: Rice and beans, Lettuce (I luv me a good salad) or Bread.
 
My Obama plan - McDonald's $1 menu: 2 Caesar side salads (comes with dressing), 2 Spicy McChicken sandwiches (hold the mayo). Take them home, throw salad into a real bowl and then take the sandwiches and toss out the bread. Take the chicken patties and chunk them up and throw it in the salad then add only as much dressing as you need. $4.10 before I add an ice cold glass of beer and start surfing some porn or STS.
