How do you go about finding out which keywords have better payouts? Or do you just have to get lucky? I know there is a lot more competition and everything with the better paying keywords, but I was just curious.

Here's a table that contrasts the highest paying keywords against the most profitable keywords:

As far as discovering words not on that table, I don't know of a good method for that other than trial and error. You can figure out how much people are bidding for AdWords using the Google keyword tool:

Under "Choose data to display" select "Cost and ad position estimates" and put in $100 as the amount you're willing to pay.
Overture also offers a similar tool:
