what does "Page eCPM" mean in plain english? is over 100 good or bad?

are you supposed to put each site in a separate channel to figure out where the clicks come from? again, sorry for not being able to totally figure this out yet

Just click on the little ? by eCPM when logged into your account and this is what it will tell you.

Effective CPM

Cost per 1000 impressions. From a publisher's perspective, CPM is a useful way to compare revenue across different channels and advertising programs. It is calculated by dividing total earnings by the number of impressions in thousands. For example, if a publisher earned $180 from 45,000 impressions, the CPM would equal $180/45, or $4.00. However, please keep in mind that eCPM is a reporting feature that does not represent the actual amount paid to a publisher.
 
Yes it's a good idea to set up a channel for each page/site that you have adsense on to track how well it's converting for you.
