Does this mean we wont be able to find out how many searches are made for a specific keyword, unless we use their keyword tool (pretty useless since their last update)?

Google can still keep track of your queries with your IP address using their encrypted service. This will only help prevent your ISP or people snooping on your network from seeing your queries.
