What defines and aged domain?
Is it the date of registration or the length of time that the domain/site has been indexed in Google?
Also, does Google even know when your domain was registered?

Age of the domain is defined when the Domain itself is registered. Doesn't matter how long the site was indexed when we are talking with domain age.

But how long the site has been Indexed is one of the most important part to look at. no "always"
 
Take into consideration if the domain has been dropped, registrant info changed, nameserver changes, server/geo changes.
 
And age of domain is helpful in SEO too but it is just one factor among several hundreds other factors.
