African Americans and Fried Chicken?

Hmmm......I'll take a stab at this.
I"d say that it's because the Whtie Task Masters back in the day would give the Blacks on their property the Diseased, Sick, and Scrawny chickens to eat for a protien source. So, they had to come up with some way to make them taste edible.
With a few hundred years of experimentation under their belt they make the best "FRIED" chicken.
That would be my best guess.
Don't worry though, with the new economy, I'm pretty sure the White Man will start to learn the secrets of making substandard foods taste better.
