Can anybody tell me how to set up wordpress so new posts don't look like: ?page_id=12 and instead have the title, like sipping-on-wu-yi-sauce?

Go to Settings -> Permalinks

Choose Custom Structure and use something like:

/%category%/%postname%

You should be all set.

There are some restrictions on WordPress's permalinks settings that can be limiting, like requiring a base for all category URLs, and not letting you define different structures for different parts of the site.

When I use WordPress as a CMS instead of just a blog, I use this plugin called Advanced Permalinks:
